Description
Grits for breakfast? Why not? Make them with cheese, with tomatoes, avocado slices, bacon and fried eggs on top for a complete, delicious meal.
Ingredients
- 3 c. water
- 3/4 c. stone-ground corn grits
- 1 t. kosher salt, plus more for serving
- 1/2 c. grated Parmesan or sharp Cheddar cheese
- 1 medium avocado, peeled, pitted and sliced
- 4 slices bacon, 5 oz. (not thick-cut)
- 1 c. cherry or grape tomatoes (about 5 oz.)
- 3 T. unsalted butter, divided
- 1/4 c. whole milk
- 4 large eggs, divided
- black pepper, to taste
Steps
- Add water, grits and salt to a medium saucepan; bring to a boil over high heat. Remove from heat; cover; set aside for 15 minutes.
- Meanwhile, prepare the cheese and toppings.
- Grate cheese on the largest holes of a box grater until there is 1/2 c. Parmesan cheese (1 1/2 oz.) or Cheddar cheese (2 oz.).
