This chicken salad makes wonderful sandwiches for guests on special occasions or for family at home. Serve on croissants, dollar rolls, your favorite bread or on large lettuce leaves.
2 1/2 c. cooked, shredded chicken*
1 c. celery, finely chopped
1 c. white grapes, sliced in halves
1/2 c. slivered almonds, toasted
1-2 T. fresh parsley
3/4 t. salt
1 c. mayonnaise
1 can water chestnuts, drained and chopped
1/4 t. saffron or curry
1 1/2 t. soy sauce
Stir together all ingredients.
Serve on croissants, dollar rolls, bread or on large lettuce leaves.
*20 oz. canned chicken, left-over chicken or rotisserie chicken.
