Whether you get the ingredients fresh from your own garden or at the grocery store, you'll love this amazing, creamy delicious dressing.
1 c. whole milk Greek yogurt
1 c. fresh parsley
1 c. mixed, soft leafy herbs, like dill, mint, tarragon and/or cilantro
2 T. chopped chives
1/2 t. lemon zest
2 T. lemon juice
1 T. extra-virgin olive oil
2 t. capers, drained and rinsed
1 garlic clove
1/4 t. sea salt
1/8 t. freshly ground black pepper
In a food processor, combine yogurt, parsley, herbs, chives, lemon zest, lemon juice, olive oil, capers, garlic, salt and pepper. Pulse until well combined. Season to taste.
Serve as a salad dressing or as a dip.
4-6 servings, about 1 cup.
Store in an airtight container in the refrigerator for up to 5 days.
