Everyone will love this pasta salad that's loaded with vegetables like tomatoes, cucumbers and onion with bow tie pasta in a dressing of olive oil, red wine vinegar and lemon juice all topped with crumbled feta cheese.
16 oz. bow tie (Farfalle) pasta
1/2 c. olive oil
1/3 c. red wine vinegar
freshly squeezed juice from 1 lemon
2 t. kosher salt
1 t. black pepper
1 t. dried oregano
1 pint grape or cherry tomatoes, halved
1/2 c. chopped red onion
1 1/2 c. chopped cucumber
1 c. pitted kalamata olives, chopped
1/4 c. capers, drained, optional
1/2 c. chopped fresh herbs (mint, dill or parsley)
1/2 c. crumbled feta cheese, for serving
Cook pasta according to package directions, about 10 minutes; drain, rinse with cold water; set aside to cool.
In a large bowl, whisk together olive oil, vinegar, lemon juice, salt, pepper and oregano. Add tomatoes and onions; let sit 10 minutes.
Add cooled pasta, cucumbers, olives, capers and herbs. Stir well.
Serve, topped with crumbled feta cheese.
