You can enjoy this classic salad in your home the way that the French do in their homes. It's quick and easy to prepare and delicious.
1 lb. carrots, washed and peeled
large handful fresh parsley, coarsely chopped
2 T. extra virgin olive oil
2 T. freshly squeezed lemon juice or red wine vinegar
2 t. Dijon mustard
1 t. honey
1/4 t. kosher salt
10-12 grinds freshly ground black pepper or 1/8. t. pepper
Grate carrots with a food processor or a box grater. Place in a large bowl with chopped parsley.
In a small jar or a measuring cup, combine olive oil, lemon juice, mustard, honey, salt and pepper; shake or whisk to blend. Pour over carrots; toss well to coat. Adjust seasoning to taste, if necessary.
Cover. Refrigerate until ready to serve.
