This macaroni salad is a keeper, simple and easy to prepare. It has a mayonnaise based dressing and lots of ingredients that make it delicious. It's going to be your go-to recipe in the future when you want a pasta salad.
Salad:
2 c. dry elbow macaroni
1/3 c. diced celery
1/4 c. minced red onion, soaked in cold water for 5 minutes, drained
1 T. minced flat-leaf parsley
1/2 c. diced tomato
Dressing:
1/2 c. prepared mayonnaise
3/4 t. dry mustard
1 1/2 t. sugar
1 1/2 T. cider vinegar
3 T. sour cream
1/2 t. kosher salt, plus more to taste
freshly ground black pepper, to taste
Cook pasta according to package directions; drain; rinse.
In a large bowl, combine cooked macaroni, celery, onion, parsley and tomato, if using.
Dressing:
In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour over the salad; stir.
Season with salt and pepper, to taste. Cover. Refrigerate.
Serve.
Store leftovers covered in the refrigerator, for up to 3 days.
