Use those leftover hard boiled eggs to make these yummy deviled eggs. In just a few minutes and a few ingredients you can have these little gems.
12 hard boiled eggs, peeled
6 T. mayonnaise
1 t. ground mustard
1/4 t. salt
1/4 t. pepper
paprika for garnish, if desired
Hard boil a dozen eggs; cool.
Cut eggs lengthwise in half. Slip out yolks; mash with a fork.
In a small bowl, stir in mayonnaise, ground mustard, salt and pepper.
Fill whites with egg yolk mixture, heaping it lightly.
Sprinkle with paprika, for garnish, if desired. Cover.
Refrigerate up to 24 hours.
24 servings.
Tip: Before filling, cut a very thin slice off of the bottoms of egg white halves before filling to help the deviled eggs stay in place on the serving plate.
