1 cauliflower head, cut into florets
3 T. butter, melted
1/2 - 1 t. freshly ground black pepper
1/2 c. freshly grated Pecorino cheese, plus extra for serving
Preheat oven to 425 degrees F.
Place florets on a baking sheet. No aluminum foil or parchment is needed, it compromises the crispness of the cauliflower.
Drizzle butter over the florets; toss them well to cover.
Season with pepper; toss. Cover with the cheese; toss again.
Roast 20 - 25 minutes, until cauliflower is golden and cheese is crisp on the baking sheet. Remove the pan from the oven; sprinkle on more cheese; let pan sit for 2 - 3 minutes.
Transfer the cauliflower and crisped cheese to a platter.
2-4 servings.
Tip: Pecorino cheese is very salty so no extra salt is needed.
