Family and friends will tell you that this is a 5 star recipe because it is so surprisingly good. You'll love it because it's so easy and quick to make. It's a tomato sandwich in a salad.
4 medium garden fresh in-season tomatoes (Heirloom are the best)
3/4 c. mayonnaise
1 sleeve saltine crackers, coarsely broken
salt, to taste
black pepper, to taste
Wash, seed and coarsely chop the tomatoes. Spread out on paper towels to drain excess liquid.
In a medium bowl, combine tomatoes and mayonnaise. Add the broken crackers; toss lightly to coat. Add salt and generous amounts of black pepper, to taste.
Serve immediately.
