This will quickly become your go to salad for any gathering or potluck. It's perfect with romaine, avocados, tomatoes, pasta, and crisp bacon served with a creamy dressing.
8 oz. farfalle (bowtie) pasta or favorite
1/4 c. light mayonnaise
1/4 c. milk
1 1/2 t. Dijon mustard
2 cloves garlic, minced
3/4 t. salt
4 c. sliced romaine lettuce, lightly packed
1/2 lb. bacon, crisply cooked and chopped
2 large tomatoes, sliced
2 avocados, diced
1/4 c. feta cheese, crumbled
black pepper, to taste
Cook pasta until al dente, according to package directions, about 11 minutes; drain; rinse under cold water until cool.
In a large bowl, whisk together mayonnaise, milk, mustard, garlic and salt. Add lettuce, bacon, tomatoes, pepper and avocados; toss until coated.
Serve immediately, sprinkled with feta cheese.
