Mushroom Rice

Description

If you want to impress family and guests, make them dish for them. It's easy, economical, and so delicious.

Ingredients

non-stick cooking spray
1 c. uncooked, long grain white rice
10 oz. can condensed French onion soup
10 oz. can beef consommé
8 oz. fresh button or cremini mushrooms, thinly sliced
1/4 c. butter, cut into several slices
1 t. Worcestershire sauce
3 T. freshly grated Parmesan cheese

Preheat oven to 425 degrees F. Coat an 8 × 8 inch baking dish with non-stick cooking spray.

In the prepared baking dish, add rice, French onion soup, beef consommé, mushrooms, and Worcestershire sauce; stir. Place butter slices evenly spread on the top of the rice mixture. Cover tightly with foil.

Bake for 40 minutes. Remove foil. Sprinkle on the Parmesan cheese. Return to the oven, bake uncovered, for 20 minutes.

Remove from the oven; let dish stand for 2-3 minutes. Fluff with a fork.

Serve with more Parmesan cheese on top.
