Everyone, including the kids, will clean their plates when you serve this casserole. It's quick, easy and very flavorful.
1 lb. lean ground beef
2 c. long-grain white rice, uncooked
2 - 10.5 oz. cans French onion soup
2 - 10.5 oz. cans beef consommé
1/4-1/2 c. unsalted butter, sliced into pats
chopped chives, for garnish
Preheat oven to 425 degrees F. Spray a 9×13 inch baking dish with non-stick cooking spray; set aside.
In a medium skillet over medium heat, add ground beef; cook until browned and no longer pink, about 8-10 minutes. Discard excess grease.
Transfer ground beef to the prepared baking dish; add uncooked rice, French onion soup, and beef consommé; stir to combine. Top with butter. Cover with aluminum foil.
Bake 30 minutes. After 30 minutes, remove foil; continue baking, uncovered, for 30 more minutes, or until rice is cooked through and tender. Fluff the rice.
Serve, garnished with chives.
