Meatless dinners don't need to be boring. This casserole has pasta, four kinds of cheese, and vitamin rich spinach.
3 c. mostaccioli, uncooked
10 oz. pkg. frozen chopped spinach
4 oz. cream cheese, cubed
1 c. 2% low-fat cottage cheese
2 eggs, beaten
8 oz. pkg. shredded low-moisture part-skim Mozzarella cheese
1/4 c. freshly grated Parmesan cheese plus more for garnish
Preheat oven to 375 degrees F.
Cook pasta as directed on package, omitting any salt. Drain well.
Meanwhile, cook spinach as directed on package; drain well. Place in large bowl; add cream cheese; stir until melted. Stir in cottage cheese and eggs. Add to spinach mixture with the Mozzarella cheese; stir.
Spoon into 8x8 or 9x9 inch baking dish; top with Parmesan cheese.
Bake 25 minutes or until heated through.
Serve garnished with more Parmesan cheese, if desired.
