Meatless dinners don't need to be boring. This casserole has pasta, four kinds of cheese, and vitamin rich spinach.
Ingredients
- 3 c. mostaccioli, uncooked
- 10 oz. pkg. frozen chopped spinach
- 4 oz. cream cheese, cubed
- 1 c. 2% low-fat cottage cheese
- 2 eggs, beaten
- 8 oz. pkg. shredded low-moisture part-skim Mozzarella cheese
- 1/4 c. freshly grated Parmesan cheese plus more for garnish
Steps
- Preheat oven to 375 degrees F.
- Cook pasta as directed on package, omitting any salt. Drain well.
- Meanwhile, cook spinach as directed on package; drain well. Place in large bowl; add cream cheese; stir until melted. Stir in cottage cheese and eggs. Add to spinach mixture with the Mozzarella cheese; stir.
