Sand Beach Pudding Desserts

Description

Make summer get togethers more fun with these cute little desserts in mini buckets. They are perfect to bring to the beach, the pool or just the backyard.

Ingredients

15.25 oz. box white cake mix
water, according to box instructions
oil, according to box instructions
eggs, according to box instructions
1 lemon
2 - 3.4 oz. boxes cheesecake instant pudding (or vanilla)
4 c. cold milk
blue food coloring
1 1/2 T. blue sprinkles
1 1/2 c. crushed vanilla wafers from 30-35 Vanilla Wafers or 60 Mini Vanilla Wafers

Preheat oven to 350 degrees F. Prepare a 9×13 inch baking dish with non-stick cooking spray.

Combine cake mix, water, oil, and eggs in a large bowl according the box cake baking instructions; add the juice of the lemon and the blue sprinkles to the bowl. Mix. Pour into the prepared baking dish.

Bake 45 minutes. Once the cake is done baking, insert a wooden toothpick into the cake to test it’s done. If it comes out clean, it's done.

Cut the cake into small bite sized squares; let cake cool.

Combine cheesecake pudding mix and milk; whisk together; add blue food coloring until it’s a color you like; mix in the sprinkles.

Line up 10 mini buckets (available on Amazon); add a cake slice to each bucket; evenly distribute the pudding on top of each.

Sprinkle crushed vanilla wafers over the blue pudding.

Garnish with a Teddy Graham laying on top of a strip of the rainbow candy as a towel, other Teddy Grahams hanging out, and a paper drink umbrella on top.

Serve immediately or chill until serving.
