This cobbler comes together quickly and is the perfect summer dessert. It's made with fresh peaches, a cookie dough type crust and a crunchy sugar topping.
Peach Filling:
5–6 large fresh yellow peaches, sliced
1/4 c. sugar
Cobbler Topping:
1/2 c. salted butter, melted
3/4 c. sugar
1 t. vanilla
1 c. flour
1 t. baking powder
pinch of salt
1/4 c. turbinado sugar, optional*
whipped cream or vanilla ice cream, for serving
Preheat oven to 350 degrees F. Grease the bottom of 9×13 pan with a little butter.
Peach Filling:
Add peaches and sugar; mix directly in the pan.
Cobbler Topping:
Mix the salted butter, sugar, vanilla, flour, baking powder, and salt until a cookie-dough-like batter forms.
Place scoops of this mixture over the top of the peaches; spread with a spoon.
Bake for 30 minutes. At this point, the mixture should be juicy and bubbly around the sides.
Sprinkle the top with turbinado sugar. Bake another 10-15 minutes; finish with a few minutes under the broiler (475 degrees F) for a few minutes until it's golden brown and a bit crunchy on top. Keep a close eye on it because it can burn quickly.
To ensure a thick, saucy peach base, allow it to stand for 20-30 minutes before serving.
Serve with vanilla ice cream or whipped topping, if desired.
