Pineapple Upside Down Jello Shots

Description

Get guests in a party mood with these festive and fun little drinks. They're easy to make and delicious.

Ingredients

4 envelopes Knox gelatin, divided
2 3/4 c. pineapple juice, divided
1/4 c. grenadine
1 c. whipped cream vodka (or regular, cake or vanilla vodka)
Maraschino cherries, for garnish

2 oz. small plastic cups

Place 18 plastic cups on a baking sheet or in muffin tins.

In a medium saucepan, whisk together 3/4 c. pineapple juice and 1 envelope of Knox gelatin; stir in grenadine. Heat over medium-low heat until just steamy.

Pour evenly between the plastic cups in a thin layer. Transfer to the refrigerator to chill for 1 hour.

Then, in a medium saucepan, whisk together 2 c. pineapple juice, 1 c. whipped cream vodka, and 3 envelopes Knox gelatin. Heat over medium-low heat until just steamy. Divide evenly to fill the cups.

Chill in the refrigerator 2 more hours, until set.

Just before serving, cut a small hole from the center top of each to garnish with a maraschino cherry.
