Ingredients
1 lb. bacon
1 large sweet onion, such as a Vidalia, finely chopped
four 14 oz. cans pork and beans
1/2 c. dark molasses
1/4 c. light brown sugar, packed
2 T. prepared yellow mustard

Preheat oven to 350 degrees F.
Cook the bacon in a large skillet over medium-high heat until crisp; transfer bacon to a paper towel lined plate to drain, leaving the drippings in the skillet. Crumble bacon; set aside.
Add onion to the skillet with the bacon drippings; saute several minutes until softened. Stir in the beans, molasses, brown sugar, mustard and crumbled bacon; stir well. Pour the beans into a 3 quart casserole dish.
Bake, uncovered, for about 45 minutes.
