Change up the typical caprese salad for summertime meals. It's made with juicy, sweet watermelon instead of tomatoes, mozzarella, and fresh basil.
4 oz. fresh mozzarella, cut into 1/2-inch pieces
1/4 t. salt
1/8-1/4 t. black pepper
4 c. cubed, seedless watermelon
1/4 c. thinly sliced fresh basil
1 T. good quality balsamic vinegar or balsamic glaze
1 T. extra virgin olive oil, optional
Stir mozzarella, salt and pepper together in a medium bowl; add watermelon and basil; toss. Drizzle with balsamic vinegar and olive oil, if desired.
