The sweet little gems are great for breakfast, a snack or even a dessert. They are healthier and easier to make than deep fried bananas, but are just as delicious.
2 bananas, slightly overripe but not too overripe
2 T. sugar, or preferred substitute
1 t. cinnamon
1/4 t. nutmeg, if desired
Peel bananas; slice into rounds, about 1/3 inch thick.
In a small bowl, combine sugar, cinnamon, and nutmeg. Set aside.
Lightly spray a large skillet with non-stick cooking spray; warm over medium-low heat; add banana slices.
Sprinkle half of the cinnamon mixture on top; cook for about 2-3 minutes. Flip rounds over; sprinkle on remaining cinnamon mixture. Cook for 2-3 more minutes until bananas are soft and warmed through.
