This chicken casserole is easily made with rotisserie chicken, cheese, cooked rice and cream of chicken soup. Everyone will want seconds and will ask for it to be a regular on your meal rotation.
2 c. diced rotisserie chicken (or other cooked chicken}
2 c. fresh broccoli florets, cut into bite-sized pieces*
1 can cream of chicken soup
2 c. cooked rice
1 1/2 c. shredded cheese
1/2 c. mayonnaise
1/2 - 3/4 c. crushed cornflakes (or crushed Ritz Crackers)
2 T. butter, melted
Preheat oven to 350 degrees F. Grease a 9x13 inch casserole dish.
Stir all ingredients together except for the corn flakes and butter right in the prepared baking dish.
Evenly sprinkle the crushed corn flakes over the top of the casserole; drizzle the melted butter over the top.
Bake 30 - 35 minutes or until the casserole is heated through.
8 servings.
*Frozen broccoli can be substituted as long as it is thawed out first.
