Thai Salad with Peanut Dressing

Description

This is a beautiful salad to serve to company or family. It's crunchy, delicious and filled with healthy superfoods.

Ingredients

Thai Salad:
2 c. thinly sliced kale (or lettuce)
1 1/2 c. sliced Napa cabbage
1 1/2 c. sliced red cabbage
1/2 c. sliced red bell pepper
1/2 c. shredded carrot
1 mango, sliced
1/4 c. cilantro
8 mint leaves
1 T. sliced green onions

Peanut Dressing:
1/3 c. creamy peanut butter
2 T. lime juice
3 T. honey or maple syrup
1 1/2 T. rice wine vinegar
1 1/2 T. soy sauce
1 t. sesame oil
1 t. sriracha
1/2 t. minced ginger
1 clove garlic, minced
1 T. water

freshly ground black pepper
1/4 c. peanuts, roasted, roughly chopped

In a large bowl add kale, cabbage, bell pepper, carrot, mango, cilantro, mint, and green onions; set aside.

Peanut Dressing: In a blender, add peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic, and water; puree until smooth and combined, about 1 minute. Or, the ingredients can be whisked together in a medium-sized bowl.

Add more water to thin out the dressing, if desired. Season with salt and pepper, to taste.

Gradually add dressing to coat the salad; toss to combine. Drizzle on more dressing if there's any remaining.

Serve, topped with freshly ground black pepper and chopped peanuts.
