Description
This is a beautiful salad to serve to company or family. It's crunchy, delicious and filled with healthy superfoods.
Ingredients
- Thai Salad:
- 2 c. thinly sliced kale (or lettuce)
- 1 1/2 c. sliced Napa cabbage
- 1 1/2 c. sliced red cabbage
- 1/2 c. sliced red bell pepper
- 1/2 c. shredded carrot
- 1 mango, sliced
- 1/4 c. cilantro
- 8 mint leaves
- 1 T. sliced green onions
- Peanut Dressing:
- 1/3 c. creamy peanut butter
- 2 T. lime juice
- 3 T. honey or maple syrup
- 1 1/2 T. rice wine vinegar
- 1 1/2 T. soy sauce
- 1 t. sesame oil
- 1 t. sriracha
- 1/2 t. minced ginger
- 1 clove garlic, minced
- 1 T. water
- freshly ground black pepper
- 1/4 c. peanuts, roasted, roughly chopped
Steps
- In a large bowl add kale, cabbage, bell pepper, carrot, mango, cilantro, mint, and green onions; set aside.
- Peanut Dressing: In a blender, add peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sriracha, ginger, garlic, and water; puree until smooth and combined, about 1 minute. Or, the ingredients can be whisked together in a medium-sized bowl.
- Add more water to thin out the dressing, if desired. Season with salt and pepper, to taste.
