Description
These cod fillets will be the focus of an easy weeknight meal. The fillets are rubbed with a dry rub that's full of flavor, are roasted to perfection and served with a delicious lime-butter sauce.
Ingredients
- 1 t. paprika
- 1 t. dried parsley
- 1/2 t. oregano
- 1/2 t. chili powder
- 1/2 t. garlic powder
- 1/4 t. cumin
- 1/4 t. salt
- 1/4 t. freshly ground black pepper
- 1/8 t. cayenne pepper
- 2 T. extra virgin olive oil, divided
- 2 cod fillets
- 1 T. unsalted butter
- zest and juice of 2 limes
Steps
- In a small bowl, combine all seasonings and spices; mix well.
- Brush the cod fillets with 1 T. olive oil; rub the fillets with the spice mixture, using all of the rub.
- Refrigerate the cod for at least 30 minutes, or up to 12 hours.
