Roasted Chili-Lime Cod Fillets

Description

These cod fillets will be the focus of an easy weeknight meal. The fillets are rubbed with a dry rub that's full of flavor, are roasted to perfection and served with a delicious lime-butter sauce.

Ingredients

  • 1 t. paprika
  • 1 t. dried parsley
  • 1/2 t. oregano
  • 1/2 t. chili powder
  • 1/2 t. garlic powder
  • 1/4 t. cumin
  • 1/4 t. salt
  • 1/4 t. freshly ground black pepper
  • 1/8 t. cayenne pepper
  • 2 T. extra virgin olive oil, divided
  • 2 cod fillets
  • 1 T. unsalted butter
  • zest and juice of 2 limes

Steps

  1. In a small bowl, combine all seasonings and spices; mix well.
  2. Brush the cod fillets with 1 T. olive oil; rub the fillets with the spice mixture, using all of the rub.
  3. Refrigerate the cod for at least 30 minutes, or up to 12 hours.
