These potato wedges are easy to make and irresistibly delicious and crispy with Italian seasoning, garlic powder and Parmesan cheese.
3-4 large, clean russet potatoes, sliced into wedges
4 T. olive oil
2 t. salt
2 t. garlic powder
2 t. Italian seasoning
1/2 c. shredded Parmesan cheese
freshly chopped parsley
Ranch dressing, for dipping
Preheat oven to 375 degrees F. Lightly grease a large baking sheet; set aside.
Place potato wedges in a large bowl; drizzle with olive oil; toss to coat.
In a small bowl, whisk together salt, garlic powder, and Italian seasoning; sprinkle potatoes with the cheese; toss to coat; sprinkle with the seasoning mixture; toss.
Place potatoes on the prepared baking sheet in a single layer with skin-sides-down. Bake for 25-35 minutes until potatoes are fork tender and golden.
Serve, sprinkled with freshly chopped parsley and Ranch dressing, for dipping.
