Amish Apple Fritter Bread

Description

This bread is soft and sweet, filled with apples, brown sugar and cinnamon and topped with a sweet glaze. It's a yummy dessert or a snack with tea, coffee or milk and is the perfect Christmas or housewarming gift.

Ingredients

Topping:
1/3 c. brown sugar
1 t. ground cinnamon

Bread:
1/2 c. butter (1 stick), softened
2/3 c. granulated sugar
2 eggs
2 t. vanilla extract

1 1/2 c. all-purpose flour
2 t. baking powder
1/2 c. milk

Apple Filling:
2 c. Granny Smith or Honeycrisp apples peeled, cored, and chopped (or canned apples)
1 t. ground cinnamon
1 T. granulated sugar

Glaze:
1/2 c. powdered sugar
1 T. milk

Preheat oven to 350 degrees F. Grease an 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with non-stick cooking spray.

Topping:
In a small bowl, whisk together the brown sugar and 1 t. cinnamon; set aside.

Bread:
In a large bowl, use an electric mixer to cream together the butter and granulated sugar until light and fluffy. Beat in the eggs and vanilla, just until combined.

In a small bowl, whisk together the flour and baking powder; add the flour mixture to the wet mixture; stir until combined. Add the milk; mix until smooth.

Pour half of the batter into the prepared loaf pan; spread out evenly.

Apple Filling:
In a small bowl, combine the apple filling ingredients. Pour half of the apple filling over the batter in the pan; spread on the remaining batter. Top with the remaining apple filling; press down slightly.

Topping:
Sprinkle the reserved brown sugar and cinnamon mixture over top of the bread.

Bake for 1 hour, or until a wooden toothpick inserted into the center comes out clean. Cool in the pan for about 30 minutes.

In a small bowl, combine the powdered sugar and milk together until smooth. Drizzle over the cooled bread.

Serve.

8 servings.

Tips:

Keep bread wrapped in plastic wrap or in an airtight container. The bread will keep in the refrigerator or on the counter for up to 4 days.

The bread can frozen. Wrap in plastic wrap and then foil.
