This one skillet dish is easy to make, economical, and surprisingly delicious. It's a fantastic meal to make on busy weeknights.
1 lb. lean ground beef
7.25 oz. package macaroni and cheese mix
14.5 oz. can diced tomatoes
1 c. milk
1 c. frozen peas
1 c. frozen corn
1 t. seasoned salt or to taste
1 c. shredded Cheddar cheese, divided
Heat a large skillet over medium-high heat. Cook and stir ground beef until browned and crumbled, about 5 - 7 minutes. Discard excess grease.
Stir the macaroni pasta and the packet of cheese from the package into the skillet. Stir in tomatoes, milk, peas, and corn; season with seasoned salt; bring to a boil; reduce heat to medium-low; cover; simmer until pasta is tender, about 12 minutes.
Stir one half of the Cheddar cheese into dish to melt.
Serve, topped with remaining Cheddar cheese.
