This is a fun appetizer to celebrate Halloween or the fall season. It's made with just a few ingredients and if you are really short on time, use store bought guacamole.
Homemade Guacamole:
3 medium ripe avocados, seeds discarded, avocado scooped from the peel
1 garlic clove, minced
2 Roma tomatoes, seeded and diced
1/4 c. onion, finely diced
freshly squeezed juice from 1/2 lime
1 - 2 T. fresh cilantro, minced
1/2 jalapeno, seeds and membrane discarded, finely diced, optional
dollops of sour cream, optional for eyes
Frankenstein Platter:
blue corn tortilla chips, for his hair
4-5 black olives, for his eyes, nose, and neck bolts
sliced red bell pepper, for the scar
carrot matchsticks, for his mouth
Guacamole:
Place avocado in a large bowl; smash with a fork or pastry blender. Add remaining guacamole ingredients; stir together until blended.
For Frankenstein's Platter:
Spread out the guacamole, leaving some room at the top to arrange the blue corn tortilla chips for his hair. Cut an olive in half and place on the guacamole for his eyes. Place small dollops in the centers of his eyes. Use a whole or half of an olive for his nose. Cut 4 strips from a red bell pepper and arrange for the scar on his forehead. Arrange some matchstick carrots for his mouth. Use whole or olive halves for the bolts in his neck.
Serve immediately.
Store in an airtight container in the refrigerator, if needed. Guacamole will start to discolor within 1 day.
