Everyone will be in love with the flavor combination of coconut and chocolate together in these cookies. The cookies are soft and chewy and absolutely perfect.
1 c. butter, softened
1 c. brown sugar
2/3 c. granulated sugar
2 large eggs
1 t. vanilla extract
2 3/4 c. flour
1 t. baking soda
1 t. salt
1 1/2 - 2 c. sweetened flaked coconut
2 c. semi-sweet chocolate chips
Preheat oven to 375 degrees F. Line light colored baking sheets with parchment paper.
In a large bowl, cream together butter, brown sugar, and granulated sugar for 3-4 minutes, until light and fluffy, scraping the sides of the bowl often. Add eggs and vanilla; beat until mixed together.
Stir in flour, baking soda, and salt. Fold in coconut flakes and chocolate chips.
Drop scoops onto the prepared baking sheets.
Bake for 8-10 minutes, setting a timer for 8 minutes, checking the cookies at 8, as it's better to under-bake than over-bake them.
