Description

You'll never go back to any other way of making potato salad again. No peeling, chopping, boiling or mess like with whole potatoes. This recipe is delicious, easy to make and very adaptable to making to your own taste.

Ingredients

2 lb. bag frozen hash browns or O'Brien potatoes
salt and pepper, to taste
1 c. mayonnaise
2 T. yellow mustard
1⁄4 c. green onion, chopped
2 T. dill or sweet pickle relish and/or 1 stalk chopped celery
3-4 sliced cooked bacon or bacon bit, optional
4 hard boiled eggs, chopped plus 2 more for garnish, if desired
paprika, to taste

Poke some holes in the hash brown bag with a fork; microwave on High 6 minutes. Shake bag to "stir" potatoes; microwave another 6 minutes. Open bag; pour into a bowl. Allow to cool a bit.

Season with salt and pepper, to taste.

Add mayonnaise, mustard, onion, pickle relish/celery, hard boiled eggs and cooked bacon, if using.

Refrigerate until ready to serve.

Serve, garnished with hard boiled egg slices on top and sprinkled with a bit of paprika.
