Apple Cinnamon Oatmeal Cookies

Description

These delicious cookies turn out perfectly with tons of flavor, soft and cake-like with a chewy texture.

Ingredients

1 1/4 c. all-purpose flour (scoop by spoonfuls and level to measure)
1 1/4 c. rolled old-fashioned oats*
1 t. ground cinnamon
1/2 t. baking soda
1/4 t. salt
1/2 c. unsalted butter, softened
3/4 c. packed light brown sugar
1 large egg
1 t. vanilla extract
1 c. finely chopped peeled Granny Smith apple (1/4-inch cubes or smaller so they cook through and soften)
2 t. freshly squeezed lemon juice

Preheat oven to 350 degrees F. Line two 18 x 13 inch baking sheets with parchment paper or silicone baking mats.

In a bowl, whisk together flour, oats, cinnamon, baking soda and salt for 20 seconds; set aside.

In the bowl of an electric stand mixer fitted with the paddle attachment, cream together butter and brown sugar until combined. Mix in egg and vanilla extract.

Toss apples with lemon juice in a small bowl; add flour mixture to egg and vanilla mixture; mix until combined; mix in apples.

Scoop dough out using a medium cookie scoop, or 2 T. at a time; drop onto prepared baking sheets, spacing cookies 2 inches apart. Flatten out slightly.

Bake cookies 1 sheet at a time in the preheated oven until cookies are set, about 14 - 15 minutes.

Let cookies cool on baking sheet several minutes. Transfer to a wire rack to cool completely.

Store cookies in an airtight container.

Makes 19 cookies.

*Don't substitute quick oats.
