These roasted vegetables are special, delicious and savory and would make a wonderful side dish anytime but especially on holidays.
2 lb. Brussels sprouts, trimmed and halved
1/4 c. melted butter
2 T. olive oil
4 whole garlic cloves, roughly cut
1/2 t. black pepper
1/4 t. salt
1/4 c. freshly grated Parmesan cheese
Preheat oven to 475 degrees F.
Trim and halve Brussels sprouts; place in a large bowl.
Roughly cut the garlic cloves into 4 - 5 pieces each; place in the bowl.
Drizzle on the melted butter and olive oil; stir. Season with salt and pepper; toss to combine.
Spread the sprouts out in a single layer on a rimmed baking sheet.
Roast until sprouts are tender, about 20-25 minutes. During the last 5 minutes of roasting, sprinkle on the Parmesan cheese.
Serve immediately.
