This coleslaw is truly special and is perfect for the holiday season. It features a creamy maple balsamic dressing with green cabbage, candied pecans, apple and dried, sweet cranberries.
1/4 c. mayonnaise
2 T. balsamic vinegar
2 T. extra-virgin olive oil
2 T. maple syrup
1/2 t. kosher salt, plus more if needed
1/4 t. black pepper, plus more as needed
4 c. shredded green cabbage (from about 1/2 head cabbage)
1 large apple, cut into matchsticks (any kind)
1/2 c. thinly sliced red onion (from about 1/2 medium onion)
1/2 c. dried, sweetened cranberries
2 T. chopped fresh parsley
1/2 c. candied pecans, chopped
In a large bowl, whisk together the mayonnaise, the vinegar, the olive oil, the maple syrup, the salt, and the black pepper until smooth.
Add the cabbage, apple, red onion, cranberries, parsley, and pecans.
Mix everything together. Adjust seasonings, to taste if necessary.
Serve immediately, or cover and refrigerate for about 30 minutes for flavors to blend together.

*To Make in Advance: Make the dressing; prepare the remaining ingredients; store the dressing separately. Refrigerate both. Toss together just before, or up to about 30 minutes, before serving.
