Use your instant pot to make a creamy, delicious soup that tastes like Panera's black bean soup. It's a quick, easy, healthy meal that's gluten free and vegan.
1 T. olive oil or water
1 onion, chopped
2-3 garlic cloves, minced
2 celery stalks, chopped small
1/2 red bell pepper, chopped small
1 small carrot, diced small
1 1/2 t. cumin
1 c. dry black beans, rinsed
3 c. vegetable broth
1 t. salt, plus more to taste
2 T. freshly squeezed lemon juiced from 1/2 lemon
optional garnishes: cilantro, avocado slices, salsa
Set instant pot to saute on High.
Cook the onions and garlic in 1 T. olive oil or water for 2-3 minutes. Add the celery, red bell pepper, carrots and cumin; cook for 3 minutes. Add in the dry black beans, vegetable broth and salt; stir.
Press Cancel; set to Manual on High for 30 minutes. When time is up, manually release the pressure.
Using a ladle with open holes, scoop out 1-1 1/2 c. black beans. Add in the lemon juice; use an immersion blender to blend the remaining soup, or in a blender.
Pour the blended soup back into the instant pot; add the reserved black beans. Stir; add more salt or cumin, to taste.
Serve immediately, garnished with choice of cilantro, avocado, salsa.
