Crock Pot Apple Butter

Description

It's apple season so that means it's time to make homemade apple butter. Making it in the crockpot makes it simple. It's great to serve on toast, English muffins, turkey sandwiches. It also makes a great gift.

Ingredients

6 1/2 lb. apples peeled, cored and sliced*
1 c. granulated sugar
1 c. light brown sugar, lightly packed
1 T. ground cinnamon
1/2 t. freshly grated nutmeg
1/4 t. ground cloves
1/4 t. salt
1 T. pure vanilla extract

Place the sliced apples in the slow cooker.

In a medium bowl, combine both sugars, cinnamon, nutmeg, cloves and salt; pour over the apples; stir well. Transfer to a 6 quart crock pot.

Cook on Low for about 10 hours, stirring occasionally, until the mixture is thickened and dark brown.

Uncover; stir in vanilla; continue cooking uncovered on Low for about 2 hours.

Use an immersion blender to puree the apple butter until smooth.

Spoon the mixture into sterile containers; cover; refrigerate for up to 2 weeks or freeze.

Serve on breads, muffins, pork chops.

Makes makes 4 pints/8 cups or 32 servings.

*Tips:
6 1/2 lb. of apples, peeled and cored, means that you peel and core the apples after weighing them.

Softer varieties of apples like Fuji, Golden Delicious, McIntosh, or Jonagold are better because they cook down faster.
A mixture of these would work well.
