Description
This soup is easy, quick and delicious. It's a hearty meal, packed with protein, healthy and economical.
Ingredients
- 1 T. extra virgin olive oil
- 2 garlic cloves, minced
- 1 yellow onion, diced
- 2 carrots, peeled and diced
- 15 oz. can diced tomatoes
- 1 c. dried lentils
- 15 oz. can black beans, drained and rinsed
- 1 t. chili powder
- 1/2 t. cumin
- 1/2 t. black pepper
- 1/2 t. kosher salt
- 1/2 t. crushed red pepper flakes
- 4 c. vegetable broth
Steps
- In a large pot, add olive oil; sauté garlic for 1 minute; add onions and carrots; sauté until onion is tender, about 5 minutes. Add remaining ingredients; stir; cover.
- Bring to a boil over medium heat; reduce heat to a simmer; cook until lentils and carrots are tender, about 25 - 30 minutes.
- Makes 8 one cup servings.
