Holiday Snowman Veggie Tray

Description

The holidays will be here soon, so it's time to get your recipes in order. This veggie tray makes serving and eating them so much fun. It's not hard to do and so delicious.

Ingredients

1 head cauliflower, cut into medium pieces, with more small pieces
7 whole black olives, and 16 cut in half lengthwise
large carrot, peeled and trimmed
red bell pepper strips
cucumber slices
green bell pepper, to use as a serving bowl
Ranch dressing, for dipping
additional veggies for dipping

On a cake plate or round platter, arrange larger cauliflower pieces in a circle, not worrying about little gaps. Pay attention to the outside circle shape.

FILL IN CAULIFLOWER HEAD:
Use small cauliflower pieces to fill in all the gaps without making the face too bumpy. The smaller the pieces, the easier they fit into place.

OLIVE SNOWMAN HAT:
Cut about 16 olives in half lengthwise. Start arranging the hat. Make a long straight line, for the hat brim, right above the cauliflower head, then leave a gap.

Come in from the sides and build up the hat with 3 rows of olives. Add a second layer of olives, in 2 rows, to cover the seams on the hat.

RED PEPPER HAT BAND:
Finish the veggie hat by placing a strip of red bell pepper in the gap between the hat and brim.

SNOWMAN FACE ASSEMBLY:
Use WHOLE olives to create the snowman’s face. Use 2 for the eyes and 5 or 6 for the smile. The round olives may want to roll, so nestle them down snugly between cauliflower pieces. Toothpicks are also helpful if you find they won’t stay still.

After the eyes and mouth, identify where to put the nose. Lay the carrot in the space at an angle tilting toward the bottom of the plate.

RED PEPPER SCARF:
Use the remaining red bell pepper strips to create a scarf at the bottom of the head. Lay them around the base, overlapping each other and let a couple of strips hang over just a bit.

CREATE THE RANCH DRESSING HOLDER:
Cut the top off of the green bell pepper, scoop out the seeds and carefully remove the inside membranes. Fill with Ranch dressing. Use a small spoon for serving.

Add additional vegetables like sliced cucumbers or carrot sticks to fill remaining space around the snowman. Be careful to keep cucumbers away from the head or they look like giant ears.

To make it even more festive, set the plate inside a Christmas wreath.
