Celebrate holidays with homemade candies that are easy to make and a great hostess gift. They're made with just a few ingredients that make them rich and chocolatey with roasted almonds and coconut.
Ingredients
- 1 1/4 c. shredded sweetened coconut
- 1/4 c. sweetened condensed milk
- 1/2 t. vanilla
- 18-36 roasted almonds
- 2 c. dark chocolate chips or chocolate of your choice
- 2 T. coconut oil, optional
Steps
- Stir together the coconut, condensed milk and vanilla until sticky and holds its shape when pressed together.
- Melt the chocolate on the stovetop (with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at 50% power for about 2 minutes, stirring every 30 seconds.
- Drizzle 1 t. chocolate into the bottoms of 36 one inch tiny cupcake liners. Add 1 t. coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner. Top the coconut with an almond. Pour 1 t. chocolate on top.
