Celebrate holidays with homemade candies that are easy to make and a great hostess gift. They're made with just a few ingredients that make them rich and chocolatey with roasted almonds and coconut.
1 1/4 c. shredded sweetened coconut
1/4 c. sweetened condensed milk
1/2 t. vanilla
18-36 roasted almonds
2 c. dark chocolate chips or chocolate of your choice
2 T. coconut oil, optional
Stir together the coconut, condensed milk and vanilla until sticky and holds its shape when pressed together.
Melt the chocolate on the stovetop (with the optional coconut oil to thin it) in a glass bowl over a pan of water, or in the microwave at 50% power for about 2 minutes, stirring every 30 seconds.
Drizzle 1 t. chocolate into the bottoms of 36 one inch tiny cupcake liners. Add 1 t. coconut mixture. Press on the coconut slightly to make the chocolate slide up the sides of the liner. Top the coconut with an almond. Pour 1 t. chocolate on top.
Refrigerate until ready to eat. Store in the refrigerator for up to 1 week or in the freezer for several months.
