This mix is the perfect treat to enjoy during holidays, movie night, after school snack, or to bring as a hostess gift.
1 c. (2 sticks) unsalted butter
2 c. brown sugar, packed
1/2 c. light corn syrup
1 t. vanilla
16 oz. or 1 large box Crispix cereal
1/2 t. baking soda
sea salt, for sprinkling
Pour the Crispix cereal into a large microwave safe bowl or large paper bag.
Line 2 large baking sheets with parchment paper or a silpat mat; set aside.
Combine the butter, brown sugar, corn syrup and vanilla in a large saucepan; bring to a boil over medium-high heat; allow to boil for 1 1/2 - 2 minutes, stirring frequently, being careful not to boil too long or caramel will become too crunchy. Remove from heat; add the baking soda. The mixture will foam a bit and then settle.
Add the caramel mixture to the Crispix; stir gently with a spatula. Place the bowl in the microwave; heat on high for 1 minute; remove from microwave; stir gently. Repeat 3 more times for a total of 4 minutes.
Spread mixture out evenly onto the prepared baking sheets; sprinkle generously with sea salt.
Allow to cool completely, breaking pieces or chunks apart with your hands or a spatula while it cools.
Store in an air tight container for up to 5 days.
