Description
This is a wonderful salad that's easy to make and is perfect for holidays. Making it a day in advance save you from stress at holiday time. Serve it in a beautiful trifle bowl, if desired.
Ingredients
- 1 medium head iceberg lettuce, torn
- 1 medium green pepper, chopped
- 1 small sweet red pepper, chopped
- 1 medium onion, sliced and separated into rings
- 2 c. frozen peas (10 oz.)
- 1 c. mayonnaise
- 2 T. sugar
- 1 c. shredded Cheddar cheese
- 12 bacon strips, cooked and crumbled
- 3/4 c. dried cranberries
Steps
- Cook bacon using your preferred method. Transfer to a paper towel lined plate to drain; cool. Crumble.
- In a 4 quart or a 13x9 inch glass dish, layer the first 5 ingredients. In a small bowl, mix mayonnaise and sugar; spoon over salad, spreading to cover.
- Sprinkle top with Cheddar cheese, crumbled bacon and dried cranberries. Refrigerate, covered, overnight.
