Use your leftover turkey and cranberry sauce to make delicious sandwiches. Add your favorite cheese, lettuce, tomato and cucumber and perhaps some crispy bacon to take the sandwich to the next level.
8-12 oz. sliced turkey breast or leftover white turkey meat
4 thin slices Swiss or Cheddar cheese
8 tomato slices
20 thin cucumber slices
4 lettuce leaves
8 slices bakery-style multi-grain bread or focaccia
8 bacon cooked bacon slices, optional*
Cranberry Mayo:
1/4 c. mayonnaise
1/4 c. cranberry sauce
Cranberry Mayo:
Stir together the mayonnaise and cranberry sauce until well combined.
Placed turkey on a slice of bread. Add cheese, 2 slices of tomato, cucumber slices, and lettuce.
Spread the cranberry mayo on the second slice of bread; place it on top of the sandwich.
Serve with chips and a dill pickle spear.
4 servings.
*Add 2 cooked bacon slices to each sandwich, if desired.
