Description
You can make this tasty lunch with ingredients that you probably already have on hand. It's packed with protein and tastes great.
Ingredients
- 4 large hardboiled eggs, peeled and chopped
- 30 oz. canned tuna packed in water, drained
- 1 c. mayonnaise
- 1 celery stalk, diced
- 1/2 white onion, diced or grated
- 2 large dill pickles, diced
- 2 T. lemon juice, from 1/2 lemon
- 2 T. Dijon mustard
- 1/2 t. onion powder
- 1/2 t. garlic powder
- salt and black pepper, to taste
- green onion, for garnish
Steps
- Add drained tuna to a large bowl with the celery, pickles, onion and hardboiled eggs; mix. Add remaining ingredients to the bowl; mix well.
- Sprinkle a few chopped green onions on top for garnish.
- Serve on your favorite bread, on large lettuce leaves, pm your favorite crackers or as a dip with veggie sticks.
