Tuna Salad with Hardboiled Eggs

You can make this tasty lunch with ingredients that you probably already have on hand. It's packed with protein and tastes great.
Ingredients
4 large hardboiled eggs, peeled and chopped
30 oz. canned tuna packed in water, drained
1 c. mayonnaise
1 celery stalk, diced
1/2 white onion, diced or grated
2 large dill pickles, diced
2 T. lemon juice, from 1/2 lemon
2 T. Dijon mustard
1/2 t. onion powder
1/2 t. garlic powder
salt and black pepper, to taste
green onion, for garnish

Add drained tuna to a large bowl with the celery, pickles, onion and hardboiled eggs; mix. Add remaining ingredients to the bowl; mix well.
Sprinkle a few chopped green onions on top for garnish.
Serve on your favorite bread, on large lettuce leaves, pm your favorite crackers or as a dip with veggie sticks.
