If you love Rocky Road ice cream, you'll love this Rocky Road Chocolate Bark. It's so much better than the store bought stuff and makes a great hostess gift during the holidays.
16 oz. good-quality milk or semi-sweet chocolate, finely chopped (like Ghiradelli or Lindt)
1 c. mini marshmallows
1 c. coarsely chopped walnuts
Line a baking sheet with parchment paper; set aside.
Melt the chocolate over a double boiler or in 30 second intervals in the microwave on 50% power, stirring after each.
Once the chocolate is melted, remove from the heat; let sit for a few minutes to cool slightly, stirring occasionally. Add marshmallows and walnuts; stir.
Spread the mixture in an even layer onto the prepared pan, covering about a 7x7 inch space.
Refrigerate for at least 30 minutes, or until set.
Use a sharp knife to cut the bark into 8 pieces.
Store in an airtight container in the refrigerator.
8 servings.
*Add 1/4 to 1/2 c. candied cherries halved, for even more goodness.
