Description

These delicious muffins can be enjoyed as a snack, for breakfast or dessert. Make them mini for 1 PointsPlus or regular size for 2 PointsPlus value or for 3 PointsPlus if chocolate chips are added.

Ingredients

1 box cake mix, chocolate, spice or yellow*
15 oz. can pure pumpkin puree
1/2 c. semi-sweet chocolate chips, optional

Preheat oven to 350 degrees F. Line muffin tins with paper liners.

In a medium bowl, mix cake mix and pumpkin puree together until combined; add chocolate chips, if desired.

Using a cookie scoop, add batter to the muffin liners, filling 3/4 full.

Bake mini muffins for about 16-18 minutes and regular muffins for about 22-24 minutes, or until a wooden toothpick inserted into the center of the cupcake comes out clean.

Makes about 48 mini muffins or 24 regular sized muffins.

* If you use a chocolate cake mix, the result will be very chocolatey. Use a spice cake or yellow cake mix to let the pumpkin flavor "shine"!

** Try adding one ripe, mashed banana to the cake batter for a delicious "free" addition.
