Air Fryer Mashed Potato Balls

Description

Your air fryer can make these delicious mashed potato balls in no time at all. They are like huge potato and cheese filled tater tots. They are crispy on the outside and cheesy on the inside.

Ingredients

4 c. mashed potatoes
1 c. shredded Cheddar cheese
5 green onions, sliced
2 eggs, beaten
1/2 c. flour
1 c. panko breadcrumbs
cooking spray

Line a rimmed baking sheet with parchment paper.

Mix the mashed potatoes, cheese and green onions together in a bowl.

Scoop 2 t. mashed potato mixture; roll into balls; place on the prepared baking sheet.

In a bowl, beat the eggs; add the flour to a second bowl; add the panko to a third bowl.

One by one, dip each potato ball, first in the flour, then the beaten egg and finally coated in the breadcrumbs.

Preheat the air fryer to 375 degrees F for 2-3 minutes. Spray the air fryer basket with cooking spray.

Place the balls in the basket in a single, even layer, not touching each other. (You will be cooking in batches.) Spray the tops of the balls with a little cooking spray.

Air fry at 375 degrees F for 10 to 15 minutes until golden brown and crispy. Gently turn them over halfway through the cooking time.

Serve immediately.

Makes 12 potato balls.

Tip: If making fresh mashed potatoes, let them cool for 30 minutes for easier handling.
