If you want a pasta dinner that is so good, you can serve it to company and blow their socks off, this one is it! It's simple to make with just a few ingredients and can be ready in less than 30 minutes.
Ingredients
- 20 oz. package cheese tortellini
- 4 T. fresh churned black truffle butter (store bought)
- 1 shallot, diced
- 10 oz. sliced mushrooms
- salt and pepper
- 5 oz. baby spinach
- 1 c. heavy cream
- 1 c. shredded Parmesan cheese
- red pepper flakes, for garnish, optional
Steps
- Cook tortellini according to package directions; drain; set aside.
- Meanwhile, melt black truffle butter in a large skillet; add the shallot and mushrooms; cook 5 minutes. Season with salt and pepper.
- Add spinach; cook just until wilted. Stir in heavy cream and Parmesan cheese; add cooked tortellini. Stir to combine.
