No-Bake Peanut Butter Mousse

Description

No-bake desserts are perfect for summer but are great anytime of the year. This one only takes 10 minutes to prepare and only 6 ingredients. It's creamy, fluffy and seriously delicious and even more so with your choice of toppings.

Ingredients

1 1/4 c. heavy cream, divided
1 c. powdered sugar
1 T. corn starch
8 oz. cream cheese, at room temperature
1 c. creamy peanut butter*
1 t. vanilla extract

Optional Toppings: sliced bananas, hot fudge, chocolate sauce, whipped cream, Reddi Wip, crushed chocolate sandwich cookies, shaved chocolate, or sprinkles

Place 1 c. cream in a bowl; beat with an electric mixer until firm peaks form, about 2-3 minutes. Transfer the whipped cream to a small bowl; set aside.

Combine the cream cheese, peanut butter, and vanilla in the same bowl that was used for whipping the cream. Beat until smooth, about 2 minutes. Add the powdered sugar and corn starch; beat for about 1 minute.

Slowly add the remaining 1/4 c. cream while beating until smooth and creamy, about 30 seconds. Use a spatula to gently stir in the reserved whipped cream until combined.

Scoop the mousse into a large serving bowl or dish or individual cups. Refrigerate until ready to serve.

Serve with desired toppings.

8 servings.

* Grease the measuring cup being used for the peanut butter with butter or non-stick cooking spray to make the peanut butter slide out easily.
