Apple, Pecan and Feta Salad with a Dijon Vinaigrette Dressing

Description
This is the perfect salad to serve anytime of the year. the Dijon vinaigrette dressing is a great contrast to the sweet pecans and apples, or pears, if you desire.
Ingredients
Salad:
2 t. butter
1 c. pecan halves
1 t. sugar
1/8 t. salt
16 c. torn romaine, spinach, or a blend of favorite lettuces
3 ripe apples, diced (Johnathon, Gala, Honeycrisp, or Fuji) (pears can be substituted)
1 c. crumbled feta cheese
Dijon Vinaigrette Dressing* See below
Dressing:
1/2 c. plus 2 T. olive oil
1/4 c. finely diced onions
1/4 c. balsamic or white wine vinegar
2 T. Dijon mustard
1/2 t. kosher salt
1/2 t. freshly ground black pepper

Salad:
In a heavy skillet over medium heat, melt the butter; toast pecans for a few minutes; sprinkle on the sugar and salt. Cook 1 more minute, watching carefully so they don't burn.
Transfer nuts to a sheet of parchment paper on the counter or a baking sheet to cool.
Place the lettuce in a bowl; top with pecans, diced apples and feta cheese.
When ready, serve the salad with the Dijon Vinaigrette dressing.
8 servings.
Dressing:
Combine all dressing ingredients in a jar or shaker with a tight-fitting lid; shake well.
This dressing can be stored for up to a week in the refrigerator.
