Description
This is the perfect salad to serve anytime of the year. the Dijon vinaigrette dressing is a great contrast to the sweet pecans and apples, or pears, if you desire.
Ingredients
- Salad:
- 2 t. butter
- 1 c. pecan halves
- 1 t. sugar
- 1/8 t. salt
- 16 c. torn romaine, spinach, or a blend of favorite lettuces
- 3 ripe apples, diced (Johnathon, Gala, Honeycrisp, or Fuji) (pears can be substituted)
- 1 c. crumbled feta cheese
- Dijon Vinaigrette Dressing* See below
- Dressing:
- 1/2 c. plus 2 T. olive oil
- 1/4 c. finely diced onions
- 1/4 c. balsamic or white wine vinegar
- 2 T. Dijon mustard
- 1/2 t. kosher salt
- 1/2 t. freshly ground black pepper
Steps
- Salad:
- In a heavy skillet over medium heat, melt the butter; toast pecans for a few minutes; sprinkle on the sugar and salt. Cook 1 more minute, watching carefully so they don't burn.
- Transfer nuts to a sheet of parchment paper on the counter or a baking sheet to cool.
