These potatoes are cheesy, creamy, and delicious that are made with already cooked mashed potatoes, sour cream, cream cheese, Cheddar cheese all topped with a buttery bread crumb topping.
4 c. mashed potatoes, from 8 - 10 large potatoes, or 4 c. prepared instant or already prepared potatoes (or left over or store bought prepared)
1 c. sour cream
8 oz. package cream cheese, softened to room temperature
1 t. minced chives
1/4 t. garlic powder
1/4 c. dry bread crumbs
1 T. butter, melted
1/2 c. shredded Cheddar cheese
Preheat oven to 350 degrees. Grease a 2 quart casserole dish.
In a large bowl, combine mashed potatoes, sour cream, cream cheese, chives and garlic powder. Add to the prepared casserole dish.
Combine the bread crumbs with the melted butter; sprinkle over the potatoes.
Bake for 50-60 minutes. Top with cheese.
Serve immediately.
