You don't have to be on a camping trip to enjoy S'mores. You can easily make them at home with just 3 ingredients, toppings of choice and your microwave. No baking is necessary.
24 oz. chocolate almond bark or Ghirardelli melting wafers
48 Ritz crackers
7 oz. marshmallow creme or marshmallow fluff
Optional Toppings:
1/2 c. graham cracker crumbs
1/2 c. marshmallow bits
1/2 c. mini-chocolate chips
1/2 c. sprinkles
Place the almond bark or wafers in a microwave safe bowl; melt following package directions.
Line 2 large baking sheets with parchment or wax paper. Place one half of the crackers on the baking sheets.
Place 1 to 2 t. marshmallow creme or fluff on the center of each cracker, using a greased spoon for easy removal of the marshmallow.
Place a cracker on top of the marshmallow creme. Gently press the crackers together to create an even layer of marshmallow in between.
Use small tongs or a fork to carefully dip the s'mores cracker sandwich into the melted chocolate. Tap the fork or tongs against the side of the bowl to remove extra chocolate; place on the prepared baking sheet. Repeat with remaining crackers.
Optional Decoration:
If wanting to decorate the tops of the s’mores cookies, do it now. Crushed graham crackers, marshmallow bits and/or mini- chocolate chips, or colorful sprinkles can be used.
Allow the cookies to set up until the chocolate is hard.
To store, allow the chocolate coating to harden completely. Store cookies in an airtight container for up to 5 days at room temperature or in the refrigerator. Separate the layers of the cookies with wax or parchment paper.
