Description

Try roasting your asparagus in the oven instead of grilling or boiling. It's a perfect side dish or appetizer, delicious, crunchy and crispy. It's healthy, gluten free and a low carb dish.

Ingredients

1 1/2 lb. asparagus, woody ends discarded
2 T. olive oil
salt and pepper
4 garlic cloves, minced
1 c. shredded Asiago cheese
4 slices bacon, cooked, chopped

Preheat oven to 425 degrees F.

Add the olive oil, salt, pepper and garlic to a 2 1/2 quart casserole dish; stir; add the asparagus; stir to coat the asparagus.

When the oven is ready, roast the asparagu, uncovered, for 10 minutes. Remove from the oven.

Sprinkle half of the shredded Asiago cheese all over asparagus; add the bacon; top with the remaining Asiago cheese.

Roast 10 more minutes, uncovered. Asparagus should be crispy and crunchy.
